More than ever, “what’s for dinner” can be quite a challenging question. By the end of the day, you’ve probably been doing home school while working remotely, trying to keep some kind of order out of dishes and laundry while telling the dog to leave the cat alone and kids to leave the dog alone, amiright?! Keeping the house clean is exactly like the video I keep seeing of the guy trying to mop the parking lot in the pouring rain, lol! When dinner time rolls around, figuring out what to eat can be a chore. With four kids in an out at home, I was already doing whole lot of cooking. These days, I am doing a WHOLE lot of cooking. I am always getting questions about what I feed my crew, how I plan what to cook and what things are healthy and kid friendly. A couple things that help me a ton to be able to answer the “what’s for dinner” question are planning a menu for the whole week and making sure to shop for and have all the ingredients on hand to cook all the meals and to have a battery of good quick recipes to make that I know will be easy and the kids will be happy to eat.
I thought I would compile a list of my favorite kid-approved, hide your veggies meals that are either one pot or quick cooks. Here’s enough inspiration for almost two weeks of meals to stay home with. Enjoy!
